I happen (in my random way) to be watching a vid about making dead-simple flatbread--four, water and heat, and nothing else.
...And she stops to ball the dough into a bowl, cover it and leave it for half an hour.
Um...
It's not gonna rise. What are you waiting for?
I don't pretend to know all about #bread, but maybe you do: Why would she let it sit for half an hour if there's no yeast involved?
