@scuttlebutt My shitpost answer: because of electrical lighting and capitalism.
The two combined to make evening light more valuable to people than morning light. In contrast, I think, to how before then most people had to live symmetrically around (solar) noon in order to maximize the decent light they had, since sunlight was mostly it.
(Artificial light used to be both bad and expensive; I remember a chart somewhere that showed how the cost of N lumens had cratered compared to the past.)
